Tapas comes from the Spanish verb "tapar", which means "to cover." The original tapas were slices of bread or meat that were used to cover the glasses of sherry drinkers in Andalusian taverns. The meats were often very salty and thirst-inducing, thus encouraging more beverage purchases. In time, the tapas became more important than the drinks.
