Restaurant owner Rosetta prides herself on her green business practices, which include solar panels on the restaurant roof, a composting operation, and the use of locally-grown, in-season fruits and vegetables whenever possible. Committed to community responsibility, Rosetta's donates hot meals to a variety of organizations. Open for lunch, dinner and late night, Rosetta's also serves Sunday brunches.

In addition to using local ingredients, Rosetta is careful about what kind of waste come out of her kitchen. Used fryer oil is repurposed as biodiesel, and food waste is composted for use in a kitchen herb garden. Even the flatware at Rosetta's Kitchen is environmentally responsible: it's made with biodegradable potato starch. (Don't eat it though.)
